. . . do the files stay on the computer too (in other words, are they just making a copy of themselves to the portable media player, and not moving)?
. . . and not just mp3 files, but also jpg, mpeg4, and txt . . . and does a flash drive work the same way?

On Windows, it should just make a copy and leave the original where it was. Windows’s policy is to copy whenever you’re dragging into a different disk letter, and to move whenever you’re dragging within the same disk.
To be absolutely sure, you can drag with the right mouse button (instead of the left one that you probably normally use), then select move or copy from the menu that shows up.
