Microsoft Project is overkill for tracking simple projects. There are many, many good software offerings in this category, including some that are web-based.
Personally, I love the simplicity of using Microsoft Visio and an addon for Visio specifically for project management. This is a separate download for Visio.
This is a FREE download from Microsoft, but there are also many third-parties who have simple solutions that use Visio including:
